Hi – due to concerns expressed by people who did not like the way the lock symbol was added to protected sheets, we will stop showing it on sheet tabs in Excel for Windows for the time-being. We may bring it back in the future in some other fashion.
If you’d like to see a lock symbol or some other visual indicator when a sheet is protected, please add your vote and comment here.

I actually liked the lock icon on the worksheet tabs but I can understand the excess real estate issue it caused for users with many worksheets. What if you changed the font/tab color and/or style and/or background for each worksheet tab name to indicate that it is locked? That would still provide the locked/unlocked information for each worksheet tab at a glance while not taking up any additional real estate! And if necessary, it could be a user-selected option (on/off).
