EXCEL For Mac needs a XML import data
There is not way to import and map XML data to excel for mac,

Good news. In the November 2019 monthly update of Excel for Mac, when you open an XML file, it will be opened as a table. If you try to use the Data menu > Get External Data > Import from Text file, it will not treat it as structured XML.
In addition to that, if you have more complex needs and you have access to Excel on Windows, you can set up a query using Power Query, and you can refresh the query in Excel for Mac. The ability to open XML files as a table is included in Excel for Mac version 16.31 (191022) or greater. To update the latest version, go to Help > Check for Updates.

NOT completed. My teammate has Excel for Mac 16.44 and it doesn't work.

I have 16.43 and well... it sort of work if you choose HTML as data source, but it does not render it correctly.
I'd like to see XML support in Excel at a much higher level than it is at the moment on mac.

Nope. Not completed. I have Excel for Mac v.16.31. When I open an XML file all I get is a row of nonsense column headers and no data. I'm paying the same subscription fee as an Excel for Windows user; I should get the same functionality.
I don't have access to a PC, so don't tell me to create a Power Query in Excel for Windows and then open it on my Mac.

Just tried it on 16.31 and....
Is no option to import XML in the ribbon, or under get external data in the menu. Yet.
I can use open-with on an XML file and select Excel, but it doesn't handle variation as well as the Windows version - e.g. if you throw federation metadata at it. Seems to work for the simple things though, but it is not like-for-like. -

I agree. You used to be able to import XML files into Excel for Mac, and after paying for an "upgrade", you cannot. Please restore this functionality.

While I agree it's possible to script a solution (and a hat-tip to you for taking the time to do that) - however - since I'm paying for Office365, I expect feature parity regardless of the OS I'm using locally.

On the plus side, I've learnt the basics of xpath and shell scripts to do what I needed. I'm not going to say it was trivial, but hobby-level coding will get you there.

The exact same ones that Excel for Windows users try to solve. I expect that even members of the Excel Team have imported XML data into a spreadsheet from time to time. Unless they use Macs, of course.
I pay the same for my Office 365 subscription that a Windows user does. I expect feature parity.
