Stop auto-date format
When i add a value like fractions, barcode values (like 4225-2), an some other instances.
Put somenthing like a checkbox in settings,
i know there are solutions like aditional key strokes or scripts.
I would like to turn off this auto-date format as default
Heck yes! Excel should NOT assume anything about my data! If I want it to turn my Data to a date, I’ll tell it to!

I too am thoroughly sick of Excel "helping" you (by which I should say "hindering" you) by converting what are meant to be text values into dates unless we go out of our way to expressly indicate that the cells should be text. (And even THAT doesn't always work if you are copying and pasting from an external data source like a text file.)
I did not ASK for this "help", and I do not WANT this "help". I want Excel to respect my inputs.
Some of the consequences of this "help" are described here, and frankly this is a ridiculous situation:
What I would LIKE to see is:
(a) An option in Options -> Proofing to disable automatic date conversion with "disabled" being the default. (I think your usage tracking will find that hardly anybody turns it on because this feature is more of a curse than a blessing for the overwhelming majority.)
(b) For those who want it, a command in either the Home ribbon or the Formulas ribbon to convert any date-like cells in the selection to dates. (I'd also be really fascinated to know how many times that command would be used. My guess is not many.)
Me too, metoo MEE TOOO - that automatic change of an entry into a date is SINCERELY ANNOYING, especially since once the cell have gotten the idea that it contains a date it keeps changing a single digit, like 7, into a date, 07-jan
edit: And since it appears that the contents of cell has actually changed, there is no "formatting back". The former content has gone and been replaced with a large number representing the date and time.Who does Microsoft think they are, replacing my data with something else?

This is very annoying! And time-consuming to write ' before every input of numbers (the only solution I have found for this)
I have the same request. When reading a csv into excel text values like 1-1 are converted to 1-Jan, adding ' is not a sufficient solution.
