Survey doesn't have options for scaling like 1-5
Scaling isn't available. Example:

Excel Survey have a sign in function (one response per user)
In Excel Survey it would be awesome if when we give someone a link to our survey we have the ability to require a username and password before viewing/completing the survey. I think it may improve security of the survey

Ensure submit is not activated by pressing enter
Many users tend to press enter to go to a new line and then pressing it automatically submits their survey answers even if they aren't finished filling it out. The survey should only be submitted by clicking on a dedicated Submit button.

Command + Shift + Arrow Keys to Select Cells (Keyboard Shortcut Enhancement)
In the desktop Excel app, users can use Command + Shift + up/down arrow keys to quickly select a set of cells without having to manually drag the mouse to select all of them. Please bring this keyboard shortcut to the Excel Online app as well!

Provide an embedding code for an Excel survey to display on the Sharepoint site (not the workbook!)
Rather than just providing a link for users to click on, it would be more practical and visually pleasing to embed the survey directly into a website.

be able to change font in Excel

You can already set the font, and font size in Excel Online – you’ll find the controls on the Home tab of the Ribbon (make sure you are in Edit mode by logging in and clicking “Edit in Excel Online”

Hi Tony,
You can already edit spreadsheets in the browser. All you need to do is upload your file to OneDrive.com (or your O365 account); make sure you are signed in to the browser with your Microsoft Account (@hotmail.com, @outlook.com, etc.) and then click on the “Edit” button and choose “Edit with Excel Online”

Do something with all the suggestions we've made about Online Survey. Time days stamp, choose multiple answers, branching.
We need progress on u excel online survey if you expect teachers to use it. Many threads in yammer with loads of comments have been made, but no action in over a year!

Allow easy embeding like Word & PowerPoint
Word and PowerPoint online have embedding options that generates an embed code for you to embed documents direction into other websites. It would be great to have that for Excel as well. While you can manually create a working embed code, it'd be much easier as an option just like with Word and PowerPoint!

Survey Improvement, and online interactive standard macro buttons on the online version
If we could design the appeal of the survey, it would be amazing.
Also, allow some standard function buttons to be placed and enable on the web app.For Excel Online

Ability to change the column width and row height
Please allow the ability to change the column width and row height, and even define the "optimal" width/height in Excel Online.

Excel online survey needs to have check box response items and themes.

CSV import exceeding row limit
Allow CSV files that exceed the row limit of Excel to be imported somehow (multiple sheets maybe). Even the function to start importing CSV at a certain row in the import wizard doesn't work properly

This is possible today using PivotTables (import the CSV directly into a PivotTable) or using Power Query or Power Pivot (which brings the data into the Data Model).

Allow find down to be found on search as find next or...
Given the differences between excel online and the desktop app, i would suggest that things such as Find next be a bit more visible as options, or at least make a link to the keyboard shortcuts more visible.

Print survey option
I need a print version of my survey with the multiple choice options ready to be circled or bubbled-in. Most of my class can do the survey/test online but sometimes students have special needs, I have more students than computers, or students who were absent need to do the quiz at a different time/place without online access.

Allow for adding more Excel options into the Excel Online Survey ie. automatically timedate stamp each entry expand features set
I work in K-12 education. While the Excel Survey Tool is useful, it is extremely limited. Google Apps for Ed forms have far more features and teachers are willing to ditch Office 365 just to get the features they need in online forms. For starters, need to add timedate stamp for each survey entry, allow for multiple answers in a choice question (ie. choose up to 3 from the 5 in this list).
